I Am Now the Proud Owner of . . .

I am now the proud owner of a stick blender!  Some people call them immersion or hand blenders because it looks like a wand that you hold in your hand.  You can put it down into your food and blend away - it's terrific for making broccoli-cheese soup!

I've been contemplating purchasing a stick blender for several weeks now, much to my colleagues amusement.  I've researched, interviewed owners of stick blenders to find out the pros/cons, and looked for recipes that would make it a worthwhile investment.

Well, yesterday was the day.  I wanted broccoli-cheese soup and I had ample research to justify my purchase, so I did it!  I found a bargain and made the investment.

Last night I greatly enjoyed my beyond smooth broccoli-cheese soup for supper.  I can't wait to see what else I can use my new gadget for!  I love kitchen gadgets!

Broccoli-Cheese Soup:
4 cups broccoli florets
2 1/2 cups vegetable broth
1/2 medium onion, chopped
1/4 cup milk
1/2 cup shredded cheddar cheese
salt and pepper to taste

Combine first 3 ingredients and bring to a boil.  Reduce heat and simmer until vegetables are tender.  Remove from heat and blend until desired consistency with a stick blender.  Add milk and cheese; stir until smooth and cheese is melted.  Return to heat if necessary to heat through.  Season to taste.

Makes 4 servings.

If you look past the fact that it looks like baby food it tastes really good!

I have one, too!!! It's the handy-dandiest little thing and does a great job of taking my home-canned tomatoes and whirring them into tomato sauce. Have also made hummus with it. Speaking of baby food - Rachel has used mine to make homemade nutritious pureed food for Little Man, including applesauce, squash, bananas, and carrots, other fruits. How did I ever get by without my little Cuisinart friend?!?!? You certainly will get your money's worth out of that little gadget!
